Thick, Soft Sugar Cookies

Cream the butter and sugar until light and fluffy. Add the eggs and vanilla and mix well. Mix in the sour cream. In a separate bowl, combine the salt, baking soda, and flour, then add that to the wet mixture and mix until combined. Roll the dough out on a floured surface to about 1/4 to 1/3 inch thick. Cut into circles and transfer to parchment-lined baking sheets. Bake at 375 for 7–8 minutes. They will NOT look done, but that’s what keeps them soft and fluffy. Bake longer and they’ll turn crunchy instead of soft. For the buttercream, beat the salted butter until smooth and creamy. Add powdered sugar gradually, then mix in vanilla. Add milk or cream a little at a time until fluffy and spreadable. Once the cookies are completely cool, frost and top with sprinkles.
