Orange Shortbread Cookies

1. Preheat your oven to 350°F.
2. Cream together the softened butter, sugar, and fresh orange zest until light and fluffy. (Tip: Rub the orange zest into the sugar with your fingertips before creaming it with the butter to release fragrant citrus oils).
3. Mix in the orange juice, then add the flour and salt until a soft dough forms.
4. Roll or press the dough into small rounds and place on a parchment-lined baking sheet.
5. Bake for 10–12 minutes, until the edges are just lightly golden.
6. Allow to cool completely, then drizzle with orange glaze if desired (to make the glaze, combine powdered sugar with 1-2 tbsp fresh orange juice until smooth).
