CARAMEL APPLE PIE COOKIES

1. Melt the butter and let it cool for 10–15 minutes. 2. Mix the melted butter, brown sugar, and granulated sugar until well combined. 3. Mix in the eggs, vanilla, and apple butter. 4. Add the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and allspice or cloves. Mix just until combined. 5. Fold in the freeze-dried apples and caramel bits. 6. Scoop into about 16 large cookie dough balls. Press a few extra apple pieces and caramel bits into the tops if you want them extra pretty. 7. Chill the dough before baking. 8. Bake using your usual large-cookie method until the edges are set and the centers are still soft. Let them cool on the baking sheet for several minutes before moving.
